After a hike on the Aubrac plateau ...

 

We have tasted aligot for you , the emblematic dish of Aubrac, . Many legends run about this creation. The fact remains that it can still be found on the Aubrac plateau, and that it is always as comforting, whatever the context in which it is tasted. For us, it will be after a nice walk of a few hours. This morning we got up at dawn to enjoy a hike on the plateau before the afternoon sun. We stop around midday, happy to have traveled more than ten kilometers through sublime landscapes: large expanses as far as the eye can see, rivers that end in waterfalls, mysterious beech forests ...

... ... we are gaining strength at the Radal auberge !

So it’s exhausted but happy that we sit down at noon at the Auberge du Radal to taste the famous Aubrac dish. The innkeeper knows his job: he prepares it before our eyes while speaking with love of his country. With strength and dexterity, he spins the aligot higher and higher, until he considers it ready to be tasted. No time to waste: once the dish stops heating, it should be eaten immediately, otherwise the aligot will "fall back".

A hearty and tasty meal ...

 

Charles Dauban approaches us and skillfully serves us the aligot, directly on our plate. It must be said that he has training. Members of the Dauban family have "Aubrac in the heart", as they say. Since 1975, they have run this inn perched on the Col du Trébatut. Located at the entrance of the high plateau on the Route des Lacs, it has always welcomed a loyal customers but also people passing through. In recent years, there have been more and more hikers who stop there for a well-deserved break, before continuing their journey to Saint-Guilhem-le-Désert or Avignon. The welcome will be warm for everyone, while Charles will prepare the aligot in front of your eyes.

Once the aligot is served alongside a good piece of beef  of Aubrac, the tasting can begin. Cheese lovers, this dish is made for you: the tomme spins as you turn the fork, and once in the mouth it's flavor has no comparison. However, it does not take much to fill a stomach. The plate is more than enough and we refuse the rab when Charles offers it to us. Our table neighbors are less reasonable to us since they gladly take over.

A dessert swallowed and the meal finished, we decide to end this outing at Trébatut with a small digestive walk towards the Radal, a 180 ° viewpoint perched a few hundred meters above the hostel. From above, we admire the Lot Valley on one side and the start of the Mont d'Aubrac on the other, while an orientation table helps us find our way in space. We take advantage for a few minutes of the landscape that stretches before our eyes, while we say that we would eat a good aligot for the evening meal ...
